SOOOO it’s no big secret that I LOVE FALL!! Its my favorite time of the year. I am a huge College football fan ROLL TIDE!!! (Don’t believe me… read these posts) and College football starts in September, then its Halloween (which is like the funnest holiday, see these post to see how much our family loves Halloween. Hint: We ALL dress up.) then comes Thanksgiving which is the best excuse to eat all the yummy food and not worry about your diet (okay maybe you do worry, but you try not too.) and then you add-on top of all those awesome things that it’s finally cooled off in Vegas and is the best temperature that it will be all year you have a recipe for AMAZINGNESS!!!
And the thing about Fall that I think most people love the most is all the pumpkin goodness. I’m pretty sure I make something delicious out of pumpkin at least 3 time a week in the Fall. Yesterday I was picking up around the house and could not shake the overwhelming urge to make something pumpkin… in August. Maybe its the crazy heat of Vegas summers or the fact that I have not decorated for a holiday in FOREVER… but whatever it is, I’ve been craving pumpkin like crazy the last week or so. I shared my feelings with my husband of my deep yearnings for some pumpkin chocolate chip cookies and he laughed and said, “Its August, you can’t make pumpkin cookies in August… it’s not fall yet.” If its wrong to make Pumpkin cookies in the beginning of August then I don’t want to be right. So of course when he took the kids to play at the park I HAD to make some pumpkin chocolate chip cookies.
And do you think that because it was August and not pumpkin making season that he didn’t eat those cookies? Hahaha yeah right! The whole family ate the heck out of those cookies.
I quickly posted the yummy cookie results on my Instagram (because we HAVE to document our food right?) and had lots of people asking for the recipe….

PUMPKIN CHOCOLATE CHIP COOKIES
I always double the recipe because who doesn’t love tons of cookies? I make the cookies pretty small (about 2-3 bites) because it makes much less of a mess with my kids that way. Doubling the recipe and doing them smaller sized will give you about 5- 6 dozen
Ingredients:
1/2 cup shortening
1 1/2 cups sugar
1 cup pumpkin
1 egg
1 tsp cinnamon
1 tsp nutmeg
1/2 cup chocolate chips (I just eye-ball it… the more the merrier)
2 1/2 cup rice flour (you can use regular flour too)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp vanilla
(sometimes I add walnuts too, depending on my mood.)
1/2 cup Walnuts
How too:
1) Cream the shortening with the sugar.
2) Mix the dry ingredients in a separate bowl.
3) Add pumpkin and egg to the creamed sugar.
4) Mix the dry ingredients in with the wet slowly.
5) Add in the vanilla
6) Mix in the chocolate chips by hand. (Its going to be pretty thick, so you will get in a nice workout.)
7) Drop by spoonfuls onto a greased cookie sheet. (I get my fingers wet and ball up the dough as best as I can. I keep a little bit of water on hand to keep my hands wet and to keep the dough from sticking to my hands.)
8) Bake 350 for 10-15 minutes (I usually do about 12. You want them to still be very soft when you remove them from the oven.)
Let the cookies rest for about 5 minutes (or sneak a few if you can’t wait).
They will be very soft and thats why I love them so much.

I also found a recipe over at Lexi Michelle Blog that I also tried recently. I try other recipes to see how they compare to the one I’ve been using for over 10 years and this was the first one that I loved almost as much as mine. They really were fabulously delicious. Her recipe does have milk in it and oil instead of shortening and there is no nutmeg… So it’s up to you which one you think you would rather do… or give them both a try to see which one you like (most likely you will have an equal pumpkin cookie obsession.)
