The BEST Pumpkin Cookies

SOOOO it’s no big secret that I LOVE FALL!! Its my favorite time of the year. I am a huge College football fan ROLL TIDE!!! (Don’t believe me… read these posts) and College football starts in September, then its Halloween (which is like the funnest holiday, see these post to see how much our family loves Halloween. Hint: We ALL dress up.) then comes Thanksgiving which is the best excuse to eat all the yummy food and not worry about your diet (okay maybe you do worry, but you try not too.) and then you add-on top of all those awesome things that it’s finally cooled off in Vegas and is the best temperature that it will be all year you have a recipe for AMAZINGNESS!!!

 

And the thing about Fall that I think most people love the most is all the pumpkin goodness. I’m pretty sure I make something delicious out of pumpkin at least 3 time a week in the Fall. Yesterday I was picking up around the house and could not shake the overwhelming urge to make something pumpkin… in August. Maybe its the crazy heat of Vegas summers or the fact that I have not decorated for a holiday in FOREVER… but whatever it is, I’ve been craving pumpkin like crazy the last week or so. I shared my feelings with my husband of my deep yearnings for some pumpkin chocolate chip cookies and he laughed and said, “Its August, you can’t make pumpkin cookies in August… it’s not fall yet.” If its wrong to make Pumpkin cookies in the beginning of August then I don’t want to be right. So of course when he took the kids to play at the park I HAD to make some pumpkin chocolate chip cookies.

 

And do you think that because it was August and not pumpkin making season that he didn’t eat those cookies? Hahaha yeah right! The whole family ate the heck out of those cookies.

 

I quickly posted the yummy cookie results on my Instagram (because we HAVE to document our food right?) and had lots of people asking for the recipe….

 

Ask and you shall receive.

 

PUMPKIN CHOCOLATE CHIP COOKIES

I always double the recipe because who doesn’t love tons of cookies? I make the cookies pretty small (about 2-3 bites) because it makes much less of a mess with my kids that way. Doubling the recipe and doing them smaller sized will give you about 5- 6 dozen

Ingredients:

1/2 cup shortening

1 1/2 cups sugar

1 cup pumpkin

1 egg

1 tsp cinnamon

1 tsp nutmeg

1/2 cup chocolate chips (I just eye-ball it… the more the merrier)

2 1/2 cup rice flour (you can use regular flour too)

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tbsp vanilla

(sometimes I add walnuts too, depending on my mood.)

1/2 cup Walnuts

How too:

1) Cream the shortening with the sugar.

2) Mix the dry ingredients in a separate bowl.

3) Add pumpkin and egg to the creamed sugar.

4) Mix the dry ingredients in with the wet slowly.

5) Add in the vanilla

6) Mix in the chocolate chips by hand. (Its going to be pretty thick, so you will get in a nice workout.)

7) Drop by spoonfuls onto a greased cookie sheet. (I get my fingers wet and ball up the dough as best as I can. I keep a little bit of water on hand to keep my hands wet and to keep the dough from sticking to my hands.)

8) Bake 350 for 10-15 minutes (I usually do about 12. You want them to still be very soft when you remove them from the oven.)

Let the cookies rest for about 5 minutes (or sneak a few if you can’t wait).

They will be very soft and thats why I love them so much.

I also found a recipe over at Lexi Michelle Blog that I also tried recently. I try other recipes to see how they compare to the one I’ve been using for over 10 years and this was the first one that I loved almost as much as mine. They really were fabulously delicious. Her recipe does have milk in it and oil instead of shortening and there is no nutmeg… So it’s up to you which one you think you would rather do… or give them both a try to see which one you like (most likely you will have an equal pumpkin cookie obsession.)

  • These are the kinds of things that make me smile. We don't have a table in the formal dining room yet so the kids end up using the area to play house.   • This corner has become the family favorite. If the chair is open you better snag it because it won't stay open for long. My 9 year old loves to read books in the chair and usually the side table is filled up with his books or drawings. The chair also reclines so it's usually the first spot taken for family movie night.   • This weeks posts I'm calling real life. My house is far from perfectly clean and there are piles of stuff in random places but it all just makes me smile. There are remnants of a fake birthday party my 7 year old threw for my 5 & 4 year old while I was in the hospital. Baby items from our sweet little newest addition that just make me so happy. There are random books my kids are reading, notebooks they have been drawing in, nerf guns from a nerf war, Princess from my daughters imaginative playing, cups of water and spelling tests sporting a big bold A at the top. There are days when the mess overwhelms me and I can't see the beauty in it all but I have been trying my best to see each thing for what it truly is... Life being lived and enjoyed. Yes eventually messes need to get cleaned up and yes I want my kids to know how to clean and value work and chores but at the same time I want them to know that this is our house, not my house but ours together and having the freedom to have fun and be creative is what these walls are for. I decorate to make our house a home and a place of beauty for us all, I don't decorate for the world to see how "perfect" I am because I am far from it. Yes we live here and I love it!!!   • Pillows and blankets everywhere, school papers and baby items are all over the couch, toys are hidden among the decor on the bookshelf and I wouldn't have it any other way.   • These two 😍❤️!!! My littlest two babies are home with me during the day while big brothers are at school!!! I have 5 kids now yall, it seems so surreal.   • Our little man came rushing into the world after 4 hours of labor yesterday 4/15/16. I was standing and leaning over trying to work through a contraction (I don't do epidurals) and he literally about fell out he came so fast. I barely had time to get back on the bed before he was out. Daddy almost had to delivery him, the nurse came running because she heard me scream. I literally went from a 6 to holding him in 30 minutes. It was a very crazy and eventful labor. We named him Fynnock Grady and he was my biggest boy weighing in at 8 lb 14 oz.   • I've been having lots of kidney stones the past two weeks and little guy has not been liking it very much so since I am 39.5 weeks the doctor decided it was best on baby boy and me if they induce me to get him out tomorrow. Today is the last day home alone with this little beauty. She has been my baby for 4.5 years, it's really starting to sink in that tomorrow she won't be my youngest anymore. She has been the perfect girly addition to our house full of boys. She is my best little buddy and my shadow. I'm sure she will look older and taller after the baby comes because that's just how it works. I know she is going to be a great little mommy and a big helper to me. I'm excited to see her go from being the baby to the big sister but at the same time I'm not sure I'm willing to let her go and grow. It's funny how this whole parenting thing works... We sometimes wish away the hard days only to realize that we have wished away life. I love the quote by Ralph Waldo Emerson, "The Years teach much what the days never know." The days go by so slowly sometimes but the years seem to zoom by. I'm really trying my best to enjoy each day and make the most of it. At the stage of life my kids are now in, where life is full of sports, school and homework I feel like the days are beginning to zoom by as well. Today I am a mixed basket of emotion: Fear, excitement, nervousness, eagerness, overwhelmed, overjoyed, contemplative, blessed, and so much more. What will tomorrow hold? How will the kids handle a new baby after not having one in the house in so long? Hahaha this is why I hate inductions....   • It's Autism Awareness month and I can't pass up this chance to talk about my favorite 7 year old. Braddoc is the sweetest boy who fights one of the hardest battles every day. At 4 years old he was diagnosed with Autism Spectrum Disorder and Aspergers (which is now all rolled into one). I had been fighting for several years to get him diagnosed but it still was a hard realization for all of us when he was finally diagnosed. We have so many good times and some very very difficult times. Just when I think I have a grasp on this whole Autism/Autism Mom thing something changes and he hits us with a new Autism curve ball. Some days I see bright days in his future and other days I fight back the tears all day long because I have no idea what his future will be like. Just the other night I cried myself to sleep worried about his well being and how he was doing. It's a hard journey but a beautiful journey. Braddoc is learning to play team sports and has his hard days with that but mostly it's been great for him. He is very athletic and is learning how to make friends. He struggles with conversations but thankfully at 7 years old making friends is mostly about throwing around balls, riding bikes, playing tag and sports. He loves with all his heart and even though he has a very hard time with his emotions and is still learning how to control them he is one of the most empathetic people I've ever met. He loves baseball and football. He is so excited to help take care of baby brother when he comes. He falls asleep on the couch almost every night during family prayer. He is learning how to unload the dishwasher and vacuum the floor. He loves Disney and roller coasters. He would stay outside every second of the day if he could. He could eat pizza or mac and cheese for every meal but is getting really great at eating what's for dinner without too much fighting. He has the biggest smile and the most caring heart. He is always teaching me something new, whether it's patience in adversity or love through difficult times. Some days I think I am not cut out to be an Autism Mom and other days I can't thank God enough for this journey. This is Braddoc and he is the face of Autism.
